40' aft cabin walls

I'm looking for Ideas for wall covering on the aft cabin walls under the windows. Currently the walls are just plywood due to a window leak on both the port and starboard sides. My first though was 3m spray adhesive and some new headliner/hull liner material but I want to do this right. I'm very proficient in wood working so Im not new to working with my hands and I tend to like to overbuild things.
any suggestions? -
You can get mahogany luan,and stain it cherry. We did the same replacing our headliner. Looks great.

Nice Idea, and as a headliner it would enable me to buy some led recessed lights and install them.
